Bistro & Wine-Service Napkins

Not every napkin is a cover. Bistro rooms, wine bars and coffee counters get through a small cloth napkin at a rate that makes the per-unit cost the whole conversation, and the service cloth carried over a waiter’s arm is a different object again.

These are sized down and specified for turnover: a plainer weave, a fibre chosen for wash life over feel, and a hem that survives being wrung out. What we do not do is drop the hem to save money. A serged edge on a napkin washed this often frays at the corner within months, and a frayed napkin has to be thrown away rather than reissued.

For wine service we can supply plain white cotton-rich cloths, which is what sommeliers actually want, rather than trying to sell a branded version of something whose whole point is that it shows what is on it.

Why not just use a serged edge to save money?

Should wine service cloths carry our logo?

We would say no. A service cloth exists to show what has come off the bottle, and a mark on it reads as a smear waiting to happen. Plain white cotton-rich is what most sommeliers ask us for and it is cheaper.
